Chicken Salad Wrap

This is my favorite chicken salad recipe.  There’s a million variations and they will all work in a wrap.  The thin soft texture of a spinach tortilla or tomato tortilla makes it much easier to roll the sandwich.  A little hint:  spread a thin layer of mayo or Miracle Whip on the tortilla to make it bind and stay closed.  If you take these for lunch, keep them cold till you eat.  Pared up with some grape tomatoes,  julienne sliced carrots & bell peppers & ranch dressing, you’ll have one happy lunch!

Chicken Filling:
1 cooked, deboned, skin removed chicken, finely chopped my fave is a lemon pepper deli roasted chicken)
2 ribs of celery, finely diced
1 tart apple, cored and finely diced
1/2 cup dried cranberries (or cran-raisins)
1/2 cup finely chopped pecans (or nuts of your preference)
1/2 cup mayo or Miracle Whip
1/4 cup powdered sugar
a few shakes of salt & pepper
Mix it all together, place about 1/2 cup of filling on one side of the tortilla.  Fold in the ends and roll snuggly.
Enjoy!

  1. Jeannie, I have been SO HUNGRY for chicken salad! My recipe is pretty similar, although I add grapes to it! I was thinking about making up a batch, but this confirms it for me - I have to have it now. ;) (Hey - there are far worse things to crave, right??)

    1. LOL, yes far worse things to crave! I use grapes when I have them, the dried cranberries add a nice little bite of tartness too.

  3. Sounds yummy. I love chicken salad. I make mine very similar to this but sub Greek yogurt for the mayo and leave out the sugar. The yogurt cuts the fat and boosts the protein. I also make a variation that has chopped bacon and powdered ranch dressing for a bacon ranch chicken salad. Also try exchanging the tortilla for a nice piece of romaine lettuce and you have a yummy, crunchy lettuce wrap.

  6. Jeannie, your chicken salad recipe is almost identical to mine. But I have never added the powdered sugar. I am going to have to give it a try. I make these wraps, but haven't for a long time. Thanks for reminding me how good they are! Thanks for sharing your recipe with Share Your Cup.
